High Protein Salad

My weight has been something I have struggled with since I was a late teen/young adult.  I’ve had gastric bypass surgery, and never regretted my choice one bit.  But a few years ago, I did gain some weight back after I had my daughter and my marriage tanked.  Almost a year ago, I decided I needed to get back down to where I was before I got pregnant with Elizabeth.  I’ve gone down several sizes this past year with only very minor adjustments to my eating.
I tell myself if I never lost another pound, I would be happy with where I am. However that only goes so far as if I never gain another pound either.  But I know I would like to be where I was before I had my daughter.  I don’t have too much more to go and I will get there.  I’ve enjoyed the slow process, because I’ve always heard if you lose the weight slowly, you have a better chance at keeping it off.Well, my sister is getting married in July, so new motivation has arrived.  Today, I tried on a designer dress whose sizes typically run small and I fit nicely in the size 12.  While to most people this might be FAT, to me, this is AWESOME.  Sadly, the bodice area was too tight, which is usually the case for me.  But the waist fit and for me, that was motivating and encouraging to continue on my weight loss journey.

I try my best to cook well.  On this blog I make plenty of pastas, I truly love them, but when I actually serve myself, I eat very few noodles, mainly eating the protein and the vegetables.  Unless it’s an indulgence day.

For lunch today, I wanted to finish off the hot bacon mustard vinaigrette, and due to being ill the past few days, I have not been eating much of anything, particularly protein.  So, I made myself a high protein salad.  I made the what I judged a normal sized stomach portion and then ate a reduced stomach portion size.  It was delicious, I just had to share with everyone.

This recipe is measured out for one salad portion, so double, triple, or quadruple as needed.

Ingredients

  • 1/2 head of romaine heart; shredded
  • 2 hard-boiled eggs; diced
  • 1/2 cup cooked chicken
  • 2 tbsp dried cranberries
  • 1 tsp sunflower seeds
  • 1/2 carrot; diced
  • 2 tbsp hot bacon mustard vinaigrette; +/- to taste

Instructions

  1. Add the rinsed romaine to a plate or bowl.
  2. Layer the salad with each ingredient.
  3. Dress the salad with the vinaigrette.
  4. Enjoy.
