Then like the true smart aleck I am and answered confidently “American.”

Now eyes began rolling.  Weak! Boring! Serious?, were all there responses I got.  But then I asked to to be allowed to explain. Since I was given the chance to, this is my explanation, since many of you are rolling your eyes too.

What is “American” cuisine? It’s simply the food of the country, and this country is built on immigrants. Therefore the fried chicken, mac n cheese and meatloaf are part of American cuisine.  But so is the pasta, fajitas, curry, pad Thai, pho, ramen, crepes, bratwurst, and so on and so forth. All of these foods were brought here by the immigrant and are now part of “American” cuisine.

No one could argue. So yes, I copped out, but in the end, it is a true statement. Here in American we have a bit of everything, so this is the cuisine I pick.  See, I’m tricky!

Now onto the dish!

Making this dish was pretty simple.  One of the ingredients is lemongrass. I have never seen lemongrass in any of my grocery stores.  I do have an Asian market in town, so I knew I could get it there.  But then I thought about the rest of you, can you easily acquire fresh lemongrass? Thai Beef Noodles

Ingredients

  • 1 pound beefsteak; sliced
  • 3 tbsp lemongrass
  • 1 tsp dried ground ginger
  • 3 garlic cloves; minced/grated
  • 2 tbsp high heat oil
  • 1 red bell pepper; sliced
  • 1 green bell pepper; sliced
  • 1 yellow bell pepper; sliced
  • 6 green onions , sliced
  • 1 cup carrots , chopped
  • 6 oz . green beans; trimmed
  • 3 tbsp oyster sauce (use Gluten Free oyster sauce to make this dish GF)
  • 1/8 tsp brown sugar
  • 1/8 tsp black pepper
  • 1/3 cup salted peanuts; broken
  • 1/4 cup cilantro; chopped
  • 12-14 oz pkg rice noodles; softened (see package directions

Instructions

  1. In a large pan or a wok, heat the oil over high heat.
  2. Add the lemongrass, garlic, and ginger, stir.
  3. Once fragrant (just a few seconds), add the beef, cook for 2 minutes.
  4. Add the bell peppers and green beans and cook for 4-5 minutes or until the veggies reach the desired doneness.
  5. Add the oyster sauce, brown sugar, cilantro, and peanuts. Mix well. Cook together for another 2 minutes.
  6. A handful or scoopful at at time, add the softened rice noodles. Do not add the all the noodles at once because they will clump and you won't be able to get them apart easily.
  7. Serve and enjoy.

    The ingredients picture is just beautiful! I love that the sauce in this recipe has minimal ingredients— that’s what intimidates me about Asian cooking!

    This is a wonderful recipe. I really like Thai recipes with noodles. I will substitute the beef with Tofu and make this recipe.

    I usually dislike lemongrass in stir fries because it is rarely pulverized enough, so I am curious about trying the bottles stuff now. This looks yummy!

    This sounds wonderful! I love Thai food. I havent cooked with fresh lemongrass before, I wonder if any of my supermarket carries it either, I will be on the look out. Nice to know there is a pre chopped version.
