I absolutely love being a recipe developer. It’s a lot of fun coming up with new dishes and finding ways to improve or mix up old ones. However, constantly making new things means I rarely get to enjoy things I’ve already made.
It’s a good thing all my initial recipes here on TCS have HORRIBLE photos. Horrible photos mean I need to take better photos, but the only way I can take better photos is by making the recipes again. This is a win-win in my book. I am not the best meal planner.  I am more a open-the-fridge-figure-it-out type cook.  Sure, I come across recipes that I want to try, buy the ingredients needed, but more often than not, I just buy things to create into dishes. That is exactly what happened with this delicious spinach dish.

Sunday is my favorite day to go to the market.  Especially for meat.  One of my local market’s seems to have great meat choices on “Manager’s Special” every Sunday.  With the budget I have for food, meat on sale is a must.  This past Sunday, several bags of greens were on “Manager’s Special” as well, so I grabbed two bags of baby spinach.  Let’s face it, we all need more “green” in our lives.

Sauteed Spinach

Sautéed Spinach ~ Quick and easy side dish of bacon, mushrooms, onions, and spinach, ready in minutes and can be given a kick with Sriracha.

Ingredients

  • 1 tbsp . olive oil
  • 1 tbsp . butter
  • 1/2 onion , thinly sliced
  • 2 cups sliced mushrooms
  • 2 cloves grated/minced garlic
  • 4 pieces crumbled cooked bacon
  • 2 bags of baby spinach , cleaned
  • Salt and Pepper
  • Squeeze of fresh lemon
  • 1/2 tsp Sriracha (optional)

Instructions

  1. Heat a sauté pan, add oil and butter, sauté the onions, once softened, about 5 minutes, add mushrooms and cook for about 3 minutes more.
  2. Add the Sriracha if using.
  3. Add in the garlic.
  4. Lower heat to low, add in spinach and the bacon, mix well.
  5. Salt, pepper, and a squeeze of juice from 1/4 a lemon.
  6. Remove from heat and serve.

Recipe Notes

If you don't have pre-cooked bacon handy, Cut and cook the bacon first and add in the onions after 3-4 minutes of cooking.

    I adore both sautéed spinach and sautéed mushrooms – it’s so perfect to combine them in one delicious recipe! Oooooh … and toss in some onions and a bit of bacon?!?! Veggie bliss! 😀

    I am a huge fan of everything that is spinach. The salad looks so good and I will make it tomorrow. What would you recommend as a vegetarian alternative to Bacon?

      Nothing can be a substitute to bacon, so toss in some sun dried tomatoes.

    I am in love with this dish! I hear you about revisiting old recipes and updating them. Looking back at my pictures, I cringe! But hey, at least we have an excuse to revisit our recipes 🙂

    Oh my goodness this caught my eye! I’m actually salivating looking at this delicious dish and it’s a photo re-do? I think the original recipe is amazing and your pictures just delicious! I love your combo, perfect side and I think it would be a yummy main dish too – just so much yummy goodness!

    It’s funny to look back at older recipe photos, don’t you think? I laugh so hard at some of mine. Yours doesn’t look terrible, but the new ones are so much better. This is such a tasty spinach dish. Good for you that you’ve gotten to revisit it again. It looks well worth it.
