Our summer has flown by at rapid speed and school is coming. I’ve been talking to Elizabeth about all the changes that will occur once she goes back to school. She’s accustomed to half a day of school then off to day care to play with her friends.  She wasn’t too happy hear that she will go to school all day and instead of going to daycare, she’ll more than likely attend her school’s after school program. This may have brought some concerned looks.

She has some fears about first grade, nothing specific, she’s just ‘scared.’ I tried to get her excited about returning to school by going to Walmart to look at backpacks and school supplies. School supplies are always the way to my heart, so I was hoping she took after me this way. Turns out she did. She was excited looking at all the options available to her. I’m not sure exactly how it happened, nor do I expect to happen again anytime soon, but I had not stepped foot into grocery store for exactly ten days. Needless to say, we needed stuff…and a lot of it.

Elizabeth helps me make our family grocery list. I always ask her what she needs. It’s so cute, she heads into the kitchen and looks in the refrigerator to check her yogurt, cottage cheese, fruit, and juice supply. Then she inventories her snack drawer. She has her favorite condiments as well and will check on them too. Her final item to check on is her cereal. That girl LOVES her cereal.

Growing up, my brother, sister, and I had one box at a time. However, at my dad’s house, my siblings there had six or seven varieties to pick from each morning. This is the equivalent of me running out of coffee (which I had in fact done as well.) As we made our way over to the cereal aisle she went a bit crazy. She was pulling box after box off the shelves, not even asking if she could have this one or that one. She was a girl on a mission.

With all the upcoming school expenses, I have been cutting costs where I can. Luckily, when it comes to her cereals, Post Brand is a great value; I can save some money while keeping Elizabeth well supplied. Not to mention that Post cereals make great snacks for me. I felt she needed a nice assortment. Plus, I like to have an assortment in case I want to cook with it. I wanted to give the crumble a bit of a Latin twist by adding cinnamon, chili powder, and chocolate. It was so good on its own, I was afraid I might eat all the unbaked crumble. Roasted Bananas with Spiced Cereal Crumble

Ingredients

  • 4 bananas; sliced in half lengthwise
  • 2 tbsp softened butter; divided 1:1
  • 1/4 tsp ground cinnamon; divided 1/8:1/8
  • 2 tbsp brown sugar; divided 1:1

Spiced Cereal Crumble

  • 1/2 cup dark brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1 tbsp cocoa powder
  • 1/2 tsp chili powder
  • 1/8 tsp salt
  • 1/2 cup unsalted butter; chilled and sliced
  • 1 cup Post Honey Bunches of Oats Honey Roasted

Instructions

  1. Preheat oven to 400°.

Spiced Cereal Crumble

  1. Place brown sugar, flour, cinnamon, cocoa powder, chili powder, salt and chilled butter in a bowl; mix together using a fork or a pastry fork until it resembles coarse crumbles. Or place all in a food processor and pulse a few times until it is crumbly; remove and place in a bowl.
  2. Add in the cereal and stir until well-combined; set aside.

Assembly

  1. Add one tbsp of butter to the bottom of a baking dish or cast iron pan.
  2. Sprinkle with the divided cinnamon and brown sugar.
  3. Arrange the split bananas in the pan, cut to fit as needed as they might not fit whole.
  4. Dot with the remaining divided butter.
  5. Sprinkle with the remaining divided cinnamon and brown sugar.
  6. Spoon the crumble over the bananas as evenly as possible; it will be clumpy.
  7. Bake, uncovered for 15 minutes or until the bananas have reached the desired softness.
  8. Remove from the oven, and allow to rest for 5-10 minutes, but serve while still warm.

Recipe Notes

I used my cast iron skillet which resulted in a slight blackening of the bananas. Still tasty, just discolored.

This recipe is one that will work great as an after school snack or can be served as a dessert. I won’t judge if you want to eat it for breakfast either.     I’m sure your daughter’s first day of first grade is going to be wonderful… though I know how she feels about being scared of the unknown. I love this little treat you made for her. I can see my little one LOVING these roasted bananas with spiced cereal crumble, too. She’s a HUGE banana fan!
