The Super Bowl is here! I grew up in a football loving house, but now it seems I only catch a handful of games every season.  However,  I always watch the Super Bowl.  Who are you rooting for? Or do you just enjoy the commercials and halftime show?

Every year since college, I have hosted a Super Bowl party. This year is no exception.  My first party was just a bunch of college students, most not even drinking age (not that that mattered back then) and now the party is multi-generational. Retirees to toddlers.

I confess, this year I am less prepared for the game…or the party than I have been in previous years.  I’m not quite ready for the company or the food prep. Luckily, I had one solution.  

How to Make Quick Mango Salsa

Two-minute mango salsa.  I can do two minutes! And you all know I am fan of fruit salsas.  So, I headed off to my local Wal-Mart and picked up a can of Del Monte Diced Mangos, a jar of salsa and a few other goodies. Tossing everything together literally took two minutes, ok, three if you include cleaning up!

As I mentioned, my parties these days are multi-generational.  My kid along with my friends’ kids can’t handle the heat of some of my salsas, so I left this one mild and kid-friendly.  I’ll leave a bowl of diced jalapeños out for those wanting more of a kick.

Speaking of kids, do yours watch the game? Or do they get bored or worse, freaked out when everyone starts yelling at the TV when the refs inevitably make a crappy call against your team? Mine doesn’t get so much freaked out as she gets annoyed at us.

So this year I’ve decided to set up a kids station in another room.  Juice box drinks, snacks, including this mango salsa, and the DVD ‘Book of Life’, you know the one that has the über delicious Channing Tatum voicing Joaquin. If the refs throw bad calls against my team, I just might find myself in the kid’s room to watch this animated flick.

Having coloring books and crayons, blocks, dolls/actions figures, all sort of toys is a great way to keep them occupied while you pleasure or stress eat during the big game.

If you’re stressed on what to make and bring to your party, you cannot go wrong with this salsa.  It’s fast, delicious, and with the added ingredients I’ve tossed in, extremely nutritious.  

You have no reason to feel guilty for digging right in and enjoying a hearty serving. If you’re looking to keep things even lighter, dip veggies in the salsa instead of chips, but either way, this salsa with Del Monte Diced Mangos will be a hit with your tastebuds and your party!

Ingredients

  • 24 oz jar of chunky salsa (your favorite brand)
  • 15 oz can Del Monte Diced Mangos in light syrup
  • 15 oz can black beans
  • 3 tbsp purple cabbage; finely diced
  • 1/4 cup cucumbers; fined chopped
  • 2 tbsp cilantro; chopped
  • Pinch of salt and black pepper
  • Squeeze of lime (~ 1/2 lime
  • 2 diced jalapeños; chopped (optional)

Instructions

  1. Open the mangos and drain them, also strain the salsa if it is overly watery.
  2. Rinse and drain the black beans.
  3. Chopped the cucumber, cilantro, and the cabbage.
  4. Toss all the ingredients together in a large bowl.
  5. Cover and chill until ready to serve.

    I am completely crazy about mango salsa, especially if it has black beans – yum! It’s amazing on quinoa cakes and I think I could probably eat a whole bowl of it with tortilla chips all by myself!

      Me too! I saved the juices from both the mango and the salsa and am going to use it as a marinade base…kinda excited about that.

    This is seriously life-changing! I had no idea you could get mangoes diced in the can like that! I love them, but don’t buy them often because they are SO HARD to slice without wasting so much meat! I can’t wait to try these.
