Two pounds of pork belly! It’s not as much as you might think.  Sure, I have managed to use it in both the crostini appetizer and this amazing meal, but two pounds of pork belly will feed several people.

I estimate roughly 4 hungry souls, 6 if they have lots of sides to chose from, and 8 if they are hen-pecking eaters.

When the butcher tossed the slab upon the scale at Whole Foods Market in Trolley Square, I thought I might be grabbing too much.  It looked massive.  I held this huge package of meat, and to be honest, I was giddy holding pork belly.

This meat has been something I have never attempted at home, I have left to the professionals, much like seafood (which is another thing I need to overcome cooking at home.)

As these things go, I wasn’t able to make this dish as quickly as I wanted.  Illness struck my home, knocking both my daughter and me down for a week each.  We still have residual coughing (annoying as all be.)

Plus my dear friend and her family couldn’t make it over, their schedules were just too busy.  It’s possible her hubby no longer considers me a friend since he didn’t actually get to try this dish and he loves all things pork belly.

Since I was on the phone with them in Whole Foods trying to figure out what to pick up on my shopping spree, there was no way to hide that I made it.

What to Pair Pork Belly With

I paired this fabulous hunk of meat with the Quinoa with Pomegranate and Brussels Sprouts and sprinkled crumbles of gorgonzola. When I was finally able to serve this, a friend who has never been a taste tester before sat at my table. After the meal, he decided he was a groupie. I laughed, but hey, I’ll take it!

Pork belly is incredibly easy to make. I had nothing to be afraid of. It demands a tiny bit of attention, but most foods do.

This isn’t an every night meat, the fat content is high, but for special occasions, this will always do. Enjoy.

Pomegranate-Honey Glazed Pork Belly

Pomegranate Honey Glazed Pork Belly is a succulent entree with a tangy sweet glaze on a roasted pork belly for a luscious, crowd pleasing meal.

Ingredients

  • 2 lb pork belly
  • Extra virgin olive oil
  • 2 tbsp . pomegranate seeds
  • 1 tbsp . honey
  • Kosher salt
  • Black pepper

Instructions

  1. Pre-heat oven to 425°F.

  2. Score the top of the pork belly.
  3. Sprinkle the pork belly with salt and pepper and brush with olive oil.

  4. Place on a rack in a pan and cook for 30 minutes at 425°F.

  5. Remove pan from oven, lower heat to 325°F.

  6. Juice the pomegranate seeds by hand and mix with the honey, brush the top of the pork belly and return it to the oven.  Save glaze for additional basting.

  7. Cook pork belly an additional 25 minutes per pound (about 50-60 minutes), basting occasionally with additional pomegranate/honey glaze.

  8. Allow to rest for 5 minutes before slicing.

    I’ve had pork belly in restaurants but have never made it myself. It’s a cut of meat that’s really coming into it’s own. I love that you quinoa with it. That looks amazing as well. Happy New Year and thanks for all the deliciousness coming from your site!

    Whoa! Now that looks absolutely amazing! That Trolley Square Whole Foods is one of my favorites (their Asian noodle bar is really good), but am so happy that one finally opened up near us in the south valley.

    I have never attempted a pork belly, but it sounds very doable! I love the flavor combination with the sweetness of the glaze and saltiness of the pork.
