Part 7 in the “Pizzas with Dave” series…and quite possibly the last, for now anyway.

Pizza has truly morphed beyond the simple pepperoni, meatlover’s or veggie pizzas.  Putting just about anything on a pizza is acceptable today and for that, I am grateful.  However there is one item on this pizza that might seem quite odd.  The cabbage.

My sister Emily (the one who just got married…isn’t she pretty?) took a cooking course while in high school.  One day she came home and declared that we had to have cabbage on our pizza.  Her teacher had taught this to the class, and she in turned, shared it with us. While I don’t remember everyone else’s reaction to the idea, I personally was very skeptical.  But I acquiesced to her very sweet demand and am glad I did.  I have loved cabbage on pizza ever since.  It was her pizza topping suggestion that set me upon my current path of cabbage-love.

From the moment I decided cabbage on pizza was a good decision, this pizza just developed. The combination of flavors, particularly if you use a chipotle spiced BBQ sauce is a the perfect blend of a street taco and a shredded BBQ chicken sandwich.

Due to the quick-cooking nature of the outdoor pizza oven, the cabbage needs to be the very top ingredient in order to cook and slightly char.  If you cook this in your home oven, it will have the time it needs to cook and crisp up anywhere among the ingredients you layer it.

Chicken Barbacoa Pizza

Ingredients

  • Pizza Dough
  • 2 tbsp . BBQ sauce
  • ½ cup BBQ shredded chicken +/-
  • ½ cup green cabbage; diced
  • Onion slices
  • Bell pepper slices
  • Mozzarella cheese
  • Cilantro; freshly chopped
  • Extra virgin olive oil

Instructions

  1. Roll out the dough ball to the desired thinness. 
  2. Using a pastry brush, brush the edges or crust of the dough with olive oil. 
  3. Take two hearty kitchen tablespoons of BBQ sauce and spread around the dough, stopping at the olive oil border.
  4. Evenly spread the chicken over the sauce. 
  5. Layer the onions, bell peppers, cabbage and cheese.  Sprinkle freshly chopped cilantro over the entire pizza.

Outdoor Pizza Oven

  1. Place the pizza in the oven, towards the back, it will cook in about 2 minutes, but watch it, and half way through cooking, move it closer to the front of the oven.  
  2. Remove it from the oven, allow it to sit for a minute then slice and serve.

Indoor Oven with Pizza Stone

  1. Or if using a pizza stone indoors: preheat the oven to 400° and allow the stone to preheat for at least 10 minutes. 
  2. Assemble the pizza and slide it onto the stone in the oven. 
  3. Bake for 10-15 minutes or until it has reached the desired doneness.

      Christine, the cabbage when it gets all cripsy, is sooo tasty. Make sure it is on top in order to crisp. And I am jealous of the pizza oven too. It is my friends oven.

      It is crazy delicious and no need to be jealous, I am jealous too. It was on loan from a friend! We did a pizza series together and he let me use his oven. But when I settle down…I WILL have one in my back yard. It’s amazing.
