Sunday mornings are special to me. Every Sunday, or almost every Sunday, a few friends and I (and my girl) get together at our favorite local diner for breakfast. This is the type of place that has a forty minute wait most days but you’re ok with that because they hand you a cup of coffee the second you walk in the door. I love this place. The food is great. The best staff in town. It’s quirky. They have one flaw. No alcohol on the menu which means no mimosas with our Sunday meal.
A friend and I are currently planning a brunch for several friends. I’ve got time, the invitations haven’t even gone out yet, but I like to plan and get thinking about my menu. My pancakes are a must. Eggs of some kind because good protein is needed, not just the kind found in bacon and sausage.
But the one thing that is a must is a signature breakfast cocktail for our meal. Jim and I got to work…a risky undertaking but someone has to do it. We knew juice had to be our base and vodka and champagne are both the go-to breakfast booze add-ins. We wanted to avoid those. Coconut rum seemed like a great base to work with. Pineapple-orange juice sounded like the perfect complement to the rum. It was. Tropical getaway in a glass. What more can you ask for when in a land-locked dessert? I wish I had the little umbrellas! Now, where did I put those invitations?….

6 oz pineapple-orange juice
1 ½ oz (1½ shots) coconut rum
Ice
Add juice, rum, and ice to a shaker, gently shake and pour. Makes two glasses.
