Bison/Buffalo/ Sandwiches & Such

Buffalo’d Bison Burgers

Howdy everyone.  Hope you are doing well.  I feel like it has been forever since I last posted a new recipe.  In reality, it’s only been since Friday, but that feels like a long time. I have been under the weather lately and decided I was going to take the weekend and just do what I can to get back on track.  Happy to report I am feeling mostly better.  A few more days and I will be good as new….maybe better since in my down time I have been doing a lot perusing of magazines and thumbing through my cookbook collection.
I love a good hamburger, who doesn’t?  Since my gastric bypass, I have had a precarious relationship with the almighty burger.  Hand formed patties at home with lean meat are no problem.  Fast food burgers, illness is imminent.  Restaurant burgers, those are always a gamble.  Some places use ground sirloin, other use higher fat ground beefs.  Both are always delicious tasting but sadly, taste has little bearing on how my body will react. This is where bison or buffalo enters my world.  It’s super lean, and makes one seriously mean burger.  If bison is available at restaurant, I order it and load it right up. It’s downright heavenly.

I decided to give bison a try at home.  I was afraid of screwing it up because it is super lean and can dry out fast.  But I am happy to report that this burger was delicious. Not a complaint among any of the taste testers.

I love blue cheese on burgers. I agree that fast food burgers are not good for you. Most places use so many fillers, who knows what you are eating most times. I only recently tried bison and was surprised at how lean and delicious it was.

It really is an under appreciated meat. Very tasty, and very lean.

The only burgers here are McDonalds’, so when I say how amazing burgers can be people look at me sideways. Noooo…it can be so much better than that! Love the idea of topping it with blue cheese, yum!

Sandra, the wonderful thing about bison is you get all the flavor and satisfaction of a big juicy burger without all the fat. It’s a win-win. Hope you love it.

Wow Michelle I did not know about the GP surgery! I admire you! As a breast cancer survivor I know how rough surgery can be on the body and I also think just about EVERYONE has some challenge going on! I love your recipes… I haven’t delved into Bison because it’s never on Manager’s Specials at Kroger but I’ll try this. I don’t know the fat content of ground lamb but this recipe reminds me of my lamb slider recipe… my family goes nuts for it!!

Wow, I am so happy to hear you are survivor. F**K cancer. I have lost many to breast cancer in my family.
I was able to get this bison on manager special at my Kroger brand store (Smith’s) I saw it that first time and have never seen it since, but I bought all they on sale. Keep your eyes peeled for it, I know I keep looking.
