Truly love Nachos.

Back when I was in college, I used to make nachos for every gathering. They were fairly cheap, easy to make, and everyone loved them. But nachos are one of those thing you consume blindly without regard to portion control and before you know it, you’ve eaten the entire pan. No? Not you? Just me then? Okay.

You might be wondering why in the world I am droning on about nachos when I haven’t made nachos. Well, I wanted to make nachos. I was at Walmart picking up groceries and game day supplies, including Farm Rich Boneless BBQ Chicken Bites to make nachos. I was going to make a BBQ chicken version of my infamous dish and as I started gathering up all the usual items needed, I was hit with an idea.

But my store was all out of plain pita chips, and being all Darwinian, I adapted. Pita bread. And now not nachos, but bites. I continued to adapt right there in the store. It was the equivalent of being pulled over on the side of the road with my hazard lights on while I worked out the new concept and updated my grocery list. The look on my face had to be priceless as I was trying to recall what I already had at home.

What I came up with was even easier than nachos. I was finally going to make tomato bacon jam like I have wanted to for the last TEN years, use the Farm Rich Boneless BBQ Chicken Bites, some cheese, and cilantro. Done. My biggest dilemma was the cheese. In the end, I bought both bleu and cheddar cheeses. Each gave the BBQ Chicken Pita Bite a different flavor and after trying them each way, I was at stalemate. I liked them equally so I served the two versions. Cooking the chicken  according to package directions took the longest amount of time and the rest was done is an snap. These chicken bites are my go-to snack because they are made with real ingredients and cook quickly, making my life all the more easier on game day.

Game Day Grub

Easier is the name of the game on Game Day. I learned my lessen after the Big Game a few years ago. All the food requested kept me in the kitchen for almost the entirety of the game. Not anymore. I will make ahead as much of the food as I can, and then only have minimal work on game day. Luckily, Farm Rich has several other products that I’ve come to love that help me spend less time in the kitchen. Their cheese sticks, made with 100% real mozzarella cheese (which is my favorite way to get my calcium in, hehehe) and potato skins, real Idaho potatoes, are fantastic and easy.

Take care when assembling these bites. The first few I put together, I loaded them up with jam and chicken. Once I took the first bite, the remaining toppings ended up all down my front because the bread was structurally weakened by my bite. Wow, that sounds all science-engineering-ish. So basically, less is more here folks. Ingredients

  • 5 pieces of pita bread; toasted
  • 1 17 oz package Farm Rich Boneless BBQ Chicken Bites
  • 1/2 cup tomato bacon jam +/-
  • 1/4 cup cheddar cheese; grated
  • 1/8 cup bleu cheese crumbles
  • 3 tbsp fresh cilantro; chopped

Instructions

  1. Cook the chicken bites according to package directions.
  2. Toast the pita bread then cut it into quarters.
  3. Once the chicken has been made, chop it up into bite size pieces.
  4. Layer the toasted pita wedges with a kitchen teaspoon of tomato bacon jam, chicken pieces, then sprinkle cilantro and the choice of cheese.
  5. Serve and enjoy immediately.

    I’m going to have to try this for my son. We’ve been eating a lot of naan bread pizzas and he likes barbecue chicken so this would be nice for a change. Great idea.
