This is my late grandmother’s recipe and she passed it down to Mom2 and now each of my siblings and I have it. Since I am all things dough challenged, this recipe is perfect for me. It is basic and I can do basic where dough is concerned. I toss in the ingredients in the mixer, spend the next 50 minutes beating it down every 10 minutes and violá, roll it out and top it.

Growing up, pizza was served on baking sheets. My grandma didn’t have the round pizzeria style pans. The pieces in the center would be super weak, having no crust to buoy them up. It was the corner pieces that I sought after. Two sides of crust. Yes. Mmmm. Ironically, now, I go for the middle pieces. Funny how tastes change.

The pizzas were usually just cheese and sauce. Occasionally, the pizzas had all the meats and veggies. However, the one thing that stands out was the plate of bologna, salami, and American cheese that we were to use to top our pizzas. When I think about it now, I am wholly torn. In my memory it all tastes AMAZING. The grown up, food-knowledgable adult in me kind of quivers in disgust. However, if my grandma was still here and offered me her pizza and handed me a bologna and American cheese slice, I’d take and eat and let’s face, I’d probably enjoy it like I did as a kid.

Basic Pizza Dough

Ingredients

  • 2 1/2 cup HOT (not boiling) water
  • 2 tbsp oil
  • 2 tbsp sugar
  • 1 tbsp salt
  • 1 pkg (2tbsp) yeast
  • 6 cups flour; divided 3/3
  • Extra virgin olive oil

Instructions

  1. Using an electric mixer with the dough hook attachment, add the water, oil, yeast, sugar, salt and 3 cups of flour.
  2. Mix until combined.
  3. Slowly add the 3 remaining cups of flour.
  4. Mix until combined.
  5. Let it sit in the mixer, mix ever 10 minutes for the 50 minutes.
  6. After 50 minutes, place on a floured board, let sit for 5 minutes.
  7. Cut the dough to suit.
  8. Roll dough out and use in desired sheet/pan/oven/stone.
  9. Once rolled, brush edges with olive oil.
  10. Top and bake.

Recipe Notes

This will make 3 large, baking sheet pizzas, or up to 10 personal size pizzas, depending on how you chose to divide it.

    Ugh! I’m cringing at the idea of bologna and American cheese on pizza, but I love the description of your grandma’s cooking and your fond memories of it.

    I haven’t made homemade pizza dough in a very long time..nothing better. Will have to give your recipe a try. Have you tried to freeze it?.

      I have never tried to freeze it before, but I did pop some in the freezer this time and will be giving it a try. I will report back once I know how it goes.
