Apricot Mint Iced Tea ~ Fresh brewed black tea steeped with just picked apricots and mint for a refreshing beverage when beating the heat. Apricot Mint Iced Tea ~ Fresh brewed black tea steeped with just picked apricots and mint for a refreshing beverage when beating the heat ~ The Complete Savorist With the summer sun radiating and the mercury rising, there is nothing more refreshing than a glass of iced tea.  Ever since I was a kid I have loved iced tea.  We didn’t always brew it from teabags.  Growing up my mom used the powdered/crystalized stuff with sugar and lemon added.  Even writing about it now makes me nostalgic for it.  I would open the lid off the can and stick my freshly sucked on finger deep into it and lick it right off.  I can’t believe I have admitted to this act.  I don’t think my mom reads my blog, so I am safe.

Apricot Mint Iced Tea ~ Fresh brewed black tea steeped with just picked apricots and mint for a refreshing beverage when beating the heat ~ The Complete Savorist Mom2 used to brew her iced tea in the sun in a big jug.  I loved that equally to my finger-licking good powdered stuff.  Along the way she switched to brewing decaf for religious purposes, but I was still happy to get the taste.When I found myself with a bushel of apricots, I knew immediately I was going to make apricot iced tea.  The mint came as an afterthought when I out watering my herbs and the mint was out of control.Since the first batch, I have made four more batches. Sadly, I’m all out of apricots, but I’ll have peaches soon! The longer the tea sits around, the more the apricots break down and the tea thickens into a nectar like liquid.  It’s cloudy but so delicious. Hope you enjoy this Apricot Mint Iced Tea as much as I did. Apricot-Mint Iced Tea

Ingredients

  • 6 cups water
  • 8 black tea teabags
  • 10 apricots; halved and de-pitted
  • 1/2 cup fresh mint leaves
  • 1 tsp . vanilla
  • 1/2 cup simple syrup (optional)

Instructions

  1. In a large pan, bring the water to a boil.
  2. Once it is boiling, remove from heat and steep the teabags for about 8 minutes.
  3. Remove the teabags.
  4. Add the apricots and mint to a large pitcher.
  5. Pour in the hot tea and add the vanilla.
  6. If using simple syrup, add that as well.
  7. Give it a good mix and allow the tea to sit for an hour.
  8. Then refrigerate and serve when ready.

    What a fabulous idea!!! I’m a big iced tea fan, but it’s always the same green tea, simply over ice. LOVE the idea of the fresh fruit.

      Rachael, It really is refreshing…and I will be having an iced tea with peaches very soon…as soon as our peaches are in season. We’re having a very slow season.

    I just made sun tea last week for the first time and love doing it that way! I’m making a fresh batch in a couple days and am going to try it with mint and some fruit. I love the nectar description!!

      Susan, I want to make a sun tea version. I grew up with sun tea, but have yet to do it myself. Let me know what fruit you use. I bet it will be delicious.
