I offered to help her out and create a guest post for her.

However, she’s a vegetarian blogger who has been focusing on vegan recipes a lot lately and well, I’m not. Sure, I have a few here and there, but rarely have I been intentional about it. So, there was my challenge: Create a recipe for her, with my flare and pizzazz, but with no meat, no diary, no HONEY even, nada, wholly vegan.

After talking for a bit, she offered vegetarian but I was committed to making a vegan recipe. I’ve been called stubborn a time or two in my life. (SHHHH all you people who know me in real life.)Vegan Aloha Noodle Bowls ~ Grilled pineapple, zucchini, and red peppers then quickly stir-fried with mushrooms, edamame, rice noodles, and a sweet-spicy sauce for quick and utterly delicious dinner ~ The Complete SavoristTurns out, it’s rather simple to create a vegan dish, and a vegan dish I wasn’t thinking, hmmm, I want to add (insert animal protein of choice here) to make it even better. I devoured an entire bowlful of this tasty dish. Even Elizabeth ate it, except the mushrooms, I still haven’t been able to convince her to eat those yet. I love the sweet and spicy, but I didn’t make it too spicy which would have prevented her from eating this, but if you’re a spicy fan, up the Sriracha.
